Olio Nuovo Extra Virgin Olive Oil
Not all olive oils are the same; depending on when and where the olives are harvested, how they are pressed, and what the growing season is like, the character of the oil is entirely different. Sometimes, when the stars align, you get some exceptional oil. That's what we have here.
This oil comes from a single orchard in Tuscany. The growing season was hot and dry, which led to an even more pronounced flavor. This product is from the first pressing of the oil, meaning it will be the best produced this year. It is called "Olio Nuovo," meaning "New Oil." At great expense, we rush this oil to the U.S. immediately after pressing to give you a rare experience. While good olive oil is now somewhat common in North America, Olio Nuovo remains a nearly unattainable luxury. You must press, pack, and ship it by air as fast as possible to preserve the freshness; in this case, that is precisely what we have done.
You will notice the flavors of hay, summer breeze, and sunlight. You will also feel a peppery bite in the back of the mouth. We love this sensation, which softens over time. As time passes, some of those Nuovo characteristics will diminish, leaving you with what would still easily be considered one of the finer EVOOs available in the U.S.
The oil will be pressed in early November 2023. We will ship it to you in early December.
